Rhubarb Tapioca in 1920

Sugar is so scarce and the rhubarb season is here, so I am sending my rhubarb tapioca recipe which uses only part sugar:

  • 2 -8 cup granulated tapioca
  • 1/2 teaspoon salt
  • 2 1/2 cups boiling water
  • 1/4 teaspoon nutmeg
  • 1/2 cup corn syrup or
  • 1/2 cup honey
  • 1/2 sugar
  • 2 cups chopped rhubarb

Mix tapioca, salt and boiling water in a double boiler and stir until the tapioca is clear. Add the sweetening and the rhubarb and cook about 10 minutes. Just as it is taken from the stove add the nutmeg. Serve cold with slightly sweetened cream. – Mrs. S. M.
