Panned Ham in 1920

Slice of ham one-inch thick. Cut off rind of ham. Heat frying pan and rub with small piece of ham fat, brown both sides of ham quickly. Add four tablespoons hot water, cover frying pan. Turn gas as low as possible and let cook twenty minutes, turning once during cooking. It will be tender and delicious. If dinner has to wait it will not hurt by further cooking, if gas is low enough so it just simmers. The back part of a coal range is ideal for this.
