Lemon Custard Pie in 1920

Perth Amboy Evening News, Perth Amboy, New Jersey July 27, 1920, page 5

  • 2 eggs
  • 1 tablespoon butter
  • 1 cup sugar
  • 1 lemon (juice and grated rind)
  • 1 tablespoon flour
  • 1 – 8 teaspoon salt
  • 1 cup milk

Separate whites and yolks of egg. Beat yolks. Add dry ingredients. Add butter. Add lemon juice and grated rind. Mix well. Add milk. Beat whites of eggs till stiff and dry and fold into mixture. Pour into pie dish lined with pastry (not baked) and bake into a moderate oven till firm to the touch.
