Cottage Cheese Custard Pie

Rub one cup rather dry cottage cheese (not very sour) in a bowl with a fork until well separated. Make a custard of one-half cup sugar, two cups sweet milk and two well beaten eggs. Add to this the cheese. Flavor with vanilla or lemon or grate the rind of half a lemon into the custard. Bake slowly in crust-lined pan until custard is set in the middle.

Pie Crust – For one pie – it is called 1-2-3:

  • 1 cup flour
  • (a little salt)
  • 2 tablespoons lard
  • 3 tablespoons water

Mix in order given.
